  • Slightly fried sour vegetables: 500 g
    (vegetable composition includes Parsley, coriander, leeks, khalavash, cloves and mint)

How to prepare sour wash stew

  • First, fry some chicken pieces Pour the oil into the pot and add half a teaspoon of turmeric and half a teaspoon of salt and fry both sides of the chicken in it. Before frying the chicken, you can boil it in boiling water for 2 to 3 minutes to get the smell of chicken stock.
  • After frying and taking the chicken out of the pot, chop a small onion Fry it in the same oil until slightly light.
  • Add 4 to 5 cloves of garlic to the onions and fry. When the garlic aroma rises, add the tomato paste and fry until the paste is light in color. Then add three mashed and grated tomatoes to this mixture and fry until the tomato juice is lost and falls into the oil.
  • At this stage, add the sour vegetables and mix. Then add the boiling water, until it reaches the desired concentration.
  • Add pomegranate paste, broth or orange juice and some salt to the stew and let it boil. At this stage, add the chickens. Brew some saffron and pour it on the chickens, reduce the heat and put it in the pot and let the stew cook slowly for 2 to 3 hours.
  • Peel the eggplants and add salt and cook for half an hour. Set aside to remove their bitterness. Then wash and dry them with lukewarm water and then shine. Cut the four tomatoes in half and fry.
  • After 2 to 3 hours of cooking the stew, add the eggplant and tomatoes and let the stew cook with them for 15 minutes. After this time, the Sour Wash stew is ready.
